Scope of Position

The Head Cook is responsible for the operation and supervision of kitchen area.

DUTIES AND RESPONSIBILITIES:

Supervisory Responsibilities

Supervises day-to-day activities, provides training, planning, assigning, and delegating of position responsibilities of culinary front line staff. Assists in the annual review of employee performance, schedules, and administrative functions as directed.

Other Responsibilities

  • Performs all functions in accordance with applicable Tribal, Federal and other laws and gaming regulations and Kickapoo Lucky Eagle policies and procedures.
  • Ensures the highest possible standards of guest service are provided and listens and responds to guest and employee concerns and questions.
  • Ensures that all food products prepared meet established specifications and standards.
  • Ensures the proper levels of food are prepared based on forecasted needs and ensures prompt readiness.
  • Responsible for the complete set up, stocking and service of assigned food outlets. Utilizes approved methods of cooking following the specific recipe.
  • Communicates variances from standards to the Kitchen Shift Supervisor.
  • Maintains a sanitary, neat, clean, organized, safe and comfortable work environment for employees and guests.
  • Ensures that kitchen equipment is handled safely and with reasonable manufactured approved care. Properly trains staff on proper use of kitchen equipment.
  • Leads by example and displays a positive attitude and work ethic throughout the shift.
  • Alerts management to opportunities that require immediate attention in a timely manner.
  • Attends, and satisfactorily completes all required training as assigned and required.
  • Manages and maintains security of confidential information entrusted to position.

Essential Competencies

An individual must be proficient in each of the competencies listed below to successfully perform the responsibilities of this position.

Knowledge

  • Knowledge of techniques and methods of food preparation and storage. Ability to prepare creative menus and train staff accordingly.
  • Knowledge of nutritional values in food preparation. Experience in estimating food quantities required for menus periods.

Skills and Abilities

  • Mathematical Skills: Ability to add, subtract, multiply and divide in all units of measure, using whole numbers, common fractions, and decimals, and work with mathematical such as probability and inference.
  • Language Skills: Excellent oral and written communications skills. Spanish or other language skills a plus.
  • Reasoning Ability: Ability to define problems, collect data, establish facts, and draw conclusions. Ability to understand complex instructions and material. Ability to mentally process abstract ideals.

  • The employee must have the hand-eye coordination and manual dexterity to operate a keyboard, touch-screen display, telephone and calculator.
  • Lift, push and pull up to 20 lbs.

Work Environment

  • Ability to work for extended periods in an office under artificial fluorescent lighting.
  • While performing the duties of this job, the employee is frequently exposed to smoke, toxic materials, air contaminants, noise, and temperature extremes.
  • The employee must be able to perform under pressure and work long hours under stressful conditions.
  • The employee may be exposed to the risks associated in attempting to resolve issues with difficult guests and extremely irate staff members.

An individual must have the following job availability to perform one or more essential functions of this position.

  • Location: 794 Lucky Eagle Drive, Eagle Pass, TX 78852
  • Flexibility: The employee may need to work nights, weekends, holidays and/or extended hours if required.

REQUIRED ENTRY CRITERIA

Education and Experience

  • High School diploma, GED, 1 year experience in a professional kitchen or combination of education and experience.
  • Certification from the National Restaurant Association's ServSafe program (recommended).

Other Criteria

  • Must be at least 18 years of age.
  • KTTT Gaming Commission Gaming License, including successful completion of background check necessary to obtain and maintain License. Responsible to keep all documents current and valid at all times.
  • Must be able to provide authorization to work in the United States.
  • Must have access to reliable transportation to commute to and from work.

Education and Experience

  • Any combination of education, training, and experience, which demonstrates the knowledge and skill to perform the duties and responsibilities as described including successful experience as a cook preparing food in a similar setting.

Other Criteria

  • Native American preference is observed.
